Truffles are hypogeum fungis (they grow underground) and are in symbiosis (they give and receive organic
substances) with treees.
The trees linked to truffles are : oaks, cores, beeches, poplar, willows and others.
This mushroom can be white (Alba and Bianchetti) and black (Summer, Burgundy, Perigord, Muscat,
Bagnoli truffles).
Black truffles species are: Summer truffle (Tuber aestivum), Perigord truffle (Tuber melanosporum),
Brumale truffle (Tuber brumale), Macrosporum truffle (Tuber macrosporum), Burgundy truffle (Tuber
uncinatum), Bagnoli truffle (Tuber mesentericum).
White truffles species are: Alba truffle (Tuber magnatum Pico) and Bianchetti (Tuber borchii ex albidum).
Hunting is done with specifically trained dogs (lagotto and others), which, with their smell find, dig and give
the truffles to their owner.
Few truffles (Perigord, Sommer and Bianchetti) can be also be cultivated.
White truffles are sliced row on the dish, while black ones are ground and briefly warmed.
They are very precious delicacies and at first rank within the finest and most expensive food in the world.
